Cask / Barrel
The barrels' heritage from the Spanish sun tells stories of taste, craftsmanship and passion. The cask has a medium+ burn, which creates perfect balance in this Single Cask. They have then been filled with the seductive Oloroso sherry. For almost 2 years they were quietly hidden away while they were transformed and permeated by the characteristic flavor of sherry. When the time was right, they were brought back to our distillery where we filled them with our raw spirits and they were transformed anew. The years passed and the golden liquid matured and gathered an intensity and fullness that can only arise through patient waiting and careful care. It was not just a random cask that was chosen for this Single Cask, but rather a tribute to our proud traditions and passionate commitment to our craft. And now you can taste the deep and rich flavor of our Single Malt Single Cask, which is revealed by the specially selected cask.

Tasting notes
The whisky oozes well-balanced harmony, where the flavors of the Oloroso sherry lead the way, followed by an intense and sensual dance of coffee, chocolate and apricot. Every single drop provides a deep, intense and rich flavor experience that sends the senses on an enchanting journey. Ærø Whisky's Single Cask is not just a dram, but a magical journey to the beautiful and complex flavor nuances of a true masterpiece.

Alcohol
This Single Cask Whisky had a cask strength of 65,2% at bottling. A high but necessary percentage of alcohol to preserve the subtle flavor notes and characteristics from barrel ageing. When bottled, the alcohol volume drops to 60%, but still with a full spectrum of aromas and flavors. Before taking a sip, take a moment to admire the color – a deep amber that suggests patience and maturation. This whiskey is not for the faint of heart, but still take a breath and taste the 'raw' version before adding water. It is a sublime experience to take the first drops and let the taste palette explore the rich notes of coffee, chocolate and apricot. But if you feel your dram needs a little more 'opening', add 3-5 drops of water and follow the taste buds to new horizons.
