A HANDMADE PRODUCTION WITH SUSTAINABILITY IN MIND
We create our whisky in the backyard of Købmandsgården in Ærøskøbing.
The distillery building itself, which is the old wash house of the Købmandsgården, won the ‘Renover special award’ as a recognition-worthy renovation and reuse of the 19th century building. The washhouse now houses the distillery.
The brewery where the wort is produced for distillation is located in the side building of the historic Gamle Købmandsgaard in Ærøskøbing, opposite the distillery. It creates a cozy and interesting environment for our production and for visitors.
The UN’s 17 Sustainable Development Goals inspire and guide our whisky production. We care for the community we live in (goal #11) with our small production and it is important for us to produce our whisky with a high level of recyclable energy (goal #13). Caring for the community we live in on Ærø is close to our hearts, it is our life (Goal 12)
MALT FROM ÆRØ AND SOUTHERN JUTLAND
It has also been crucial for us to strengthen local agriculture, and today we use organic grain from Lone and Christian at Kammerrådgården about 4 km west of Ærøskøbing.
All our Single Malt whiskies are traceable to the individual field. We have our own malting plant in the brewhouse, but since we can’t produce all our malt ourselves, we also use certified organic malt from Fuglsang near Haderslev for our standard whisky.
OAK AND WHISKY ARE MADE FOR EACH OTHER
Ærø Eg, our most local whisky, is aged in a barrel from the iconic oak tree from Nørregade 25 in Ærøskøbing. The Royal Oak series is aged in a wine barrel from the Danish royal family. Other parts of the production are aged in our own imported American oak barrels, as well as barrels from Spain, primarily former Oloroso sherry barrels
Vi malter selv vores byg på eget maltgulv. Processen tager ca. 6 dage, hvor byggen nænsomt vendes
Vi 'koger' maltet byg og vand hen over 4 stadier. Efter sidste stadie afkøles urten inden den hældes på gæringstankene, hvor den gærer i ca. 4 døgn
